The diabetes is a disease caused by lack of insulin secretion, or reducing cellular sensitivity to insulin. It results in carbohydrates, proteins and fatty acids metabolism disorders, so the blood glucose levels significantly increase. Albumin is an important protein of blood. Herbal extracts have been used for years as diabetes treatment, and cinnamon is one of these too. So this study has done to evaluate the effect of cinnamon on blood albumin level. This is an experimental study. 30 rats, weighing 150_200gr were selected for this study. The rats were allocated randomly in to three equal groups: treatment group, diabetic control group and healthy control group. The Stereptozotocin was injected intraperitoneal in dose of 60 mg/ kg for diabetes to be induced. Treatment group received cinnamon aqueous 250 mg/ kg /animal / day, for 28 days by gavage. Both of the control groups were gavaged with distilled water for same experiment. After conforming the diabetes was induced, we measured the blood albumin level before and after prescribing cinnamon aqueous and in the first and the last day of the treatment (day 1 and day 28). After collecting the data, they were analyzed by SPSS20 and statistic test. Results have shown that blood albumin levels have decreased in diabetic control group rather than healthy control group, and meaningful changes were observed (p<0/05). Also the blood albumin levels have increased in treatment group rather than diabetic control group (p<0/05).
