Arthrosclerosis basically emerges in medium and large arteries and leads to heart disease. Epidemiological studies basically show that cardio-coronary diseases and arthrosclerosis are less prevalent in societies using medicinal herbs. This study is conducted for determining the effect of Lactuca sativa seed extract on biochemical factors of cardiovascular disease and formation of arthrosclerosis in rabbit. 40 heads of adult were randomly divided into 5 groups of 8. The first group received ordinary diet, the second olive oil as the solvent of cholesterol, the third high cholesterol diet (%1 food weight), the forth Lactuca sativa seed extract, and the fifth high cholesterol diet along with Lactuca sativa seed extract. Then, in the end of the test period, rabbits were killed by high dose of chloroform and their aorta were examined with respect to formation of arthrosclerosis platelets and also concentrations of total cholesterol, triglycerides, high density and low density lipoprotein. Results showed that using Lactuca sativa seed extract leads to the reduction of total cholesterol, triglyceride, and low density lipoprotein, but increases high density lipoprotein.
