This study was carried out to determine the effect of moisture content on several physical properties of variety of Iranian cumin seeds (zire sabz). Five levels of moisture content ranging from 7.2 to 35.3% (w.b.%) was used. The length, width, thickness and unit mass of Iranian cumin seeds increased from 4.73 to 5.30 mm, 1.44 to 1.65 mm, 1.19 to 1.23 mm and The 1000 seed weight 3.19 to 5.30g respectively as the moisture content increased. The Calculeted value of geometric mean diameter and sphericity of the cumin seed increased from 2.01 to 2.38 and 42.5 to 44.9 respectively when the moisture content increased. The reslts showed bulk density decreased from 430 to 377 kg/m3; true density decreased from 1026 to 1376 kg/m3. Porosity and terminal velocity increased respectively from 63.3 to 69.8% and 3.7 to 6.24 m/s. The static coefficient of friction also increased linearly on six surfaces, namely, galvanized iron (0.32 to 0.51), stainless steel (0.24 to 0.43),wood (0.34 to 0.68) fiberglass (0.30 to 0.59), rubber (0.42 to 0.62) and conceret (0.46 to 0.69) with the increase in moisture content from 7.3 to 35.2% d.b. The angle of repose increased linearly with increasing of moisture content respectively 42.4 to 57.7º. Physical properties data of Iranian cumin seed were determined in order to design processing equipment and machines for planting, harvesting, and various post harvest operations such as cleaning, conveying and storage.
